This delicious salad is chocked full of healthy vegetables and grains. Customize it with your favorite ingredients and it is sure to be a big hit at your next picnic or dinner party.
Wheat Berry Salad
1 C wheat berries (you can find them in the bulk section of the grocery store)
½ C diced bell peppers (the more colorful, the better)
½ C chopped olives
½ C diced green onion
½ C diced carrots
1 T olive oil
1 T balsamic vinaigrette
Simmer wheatberries in boiling water for 30 minutes or until tender. Drain and cool. Add remaining ingredients and stir. You can add any of your favorite vegetables, nuts, or seeds. If you want to add anything that could get soggy, such as avocado or tomato, I suggest you serve it on the side.
